Agar Agar Fruit Jelly (Printable)

A light, refreshing dessert made with agar agar and mixed fresh fruits. Naturally vegan and ready in just 20 minutes active time.

# What You'll Need:

→ Jelly Base

01 - 2 cups water
02 - 1 1/2 teaspoons agar agar powder
03 - 1/2 cup granulated sugar
04 - 1/2 cup fruit juice (such as orange, apple, or mango)

→ Fresh Fruits

05 - 1/2 cup diced strawberries
06 - 1/2 cup diced kiwi
07 - 1/2 cup diced mango
08 - 1/2 cup diced pineapple
09 - 1/4 cup blueberries

# How To Make It:

01 - Wash, peel, and dice the strawberries, kiwi, mango, and pineapple into small, bite-sized pieces. Rinse the blueberries and pat dry. Set all prepared fruits aside.
02 - Combine the water and agar agar powder in a medium saucepan. Whisk thoroughly to disperse the powder and prevent clumping.
03 - Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat and let simmer for 2 minutes until the agar agar is completely dissolved and the liquid is clear.
04 - Stir in the granulated sugar and continue mixing until fully dissolved. The liquid should remain smooth and free of any granules.
05 - Remove from heat and stir in the fruit juice until well incorporated. Let the mixture cool for 2-3 minutes, but do not allow it to begin setting.
06 - Distribute the prepared diced fruits evenly across the bottom of a silicone mold or glass dish. Gently press down to create an even layer.
07 - Carefully pour the warm agar agar mixture over the arranged fruits, ensuring all fruit pieces are submerged. Use a spoon to gently reposition any floating fruit.
08 - Allow the jelly to cool to room temperature, then refrigerate for at least 45 minutes or until completely firm and set.
09 - Gently unmold the jelly or cut into cubes. Serve chilled for the best texture and flavor.

# Expert Tips:

01 -
  • Its incredibly light and refreshing, making it perfect after heavy meals or on hot days
  • The combination of textures and vibrant colors makes it feel fancy without any real effort
  • Completely customizable with whatever fruits you have on hand or love most
02 -
  • Fresh pineapple and kiwi contain enzymes that prevent agar agar from setting properly, so blanch them briefly in boiling water first
  • Let the agar mixture cool slightly before pouring or the fruit may float instead of staying suspended
  • The jelly will continue to firm up in the refrigerator, so do not worry if it seems slightly soft when you first pour it
03 -
  • Always whisk agar agar into cold liquid before heating to prevent clumping
  • Lightly grease your molds with a neutral oil if you plan to unmold them for serving
