01 - Preheat oven to 400°F. Line a large baking sheet with parchment paper.
02 - In a bowl, toss potatoes, carrots, bell pepper, and zucchini with 2 tablespoons olive oil, 1 teaspoon sea salt, ½ teaspoon black pepper, and dried oregano. Spread evenly on the prepared baking sheet.
03 - Roast vegetables for 10 minutes.
04 - Pat cod fillets dry. In a small bowl, combine 2 tablespoons olive oil, lemon juice, lemon zest, 1 teaspoon sea salt, ½ teaspoon black pepper, chopped parsley, and thyme. Brush mixture evenly over cod fillets.
05 - Remove baking sheet from oven. Push vegetables to the sides and place cod fillets in the center.
06 - Return baking sheet to oven and bake for 12 to 14 minutes, until cod flakes easily with a fork and vegetables are tender.
07 - Serve immediately, optionally garnished with extra parsley and lemon wedges.
