01 - Combine Greek yogurt, honey, lemon juice, and lemon zest in a medium bowl. Stir until smooth and creamy.
02 - Toss blueberries with honey in a separate bowl if additional sweetness is desired.
03 - Spoon a layer of the lemon yogurt mixture into the bottom of four serving glasses or jars.
04 - Place a layer of blueberries over the yogurt layer.
05 - Top the blueberry layer with a layer of granola.
06 - Repeat layering yogurt, blueberries, and granola until all ingredients are used, finishing with a granola topping.
07 - Sprinkle additional lemon zest and fresh mint leaves over the parfaits. Serve immediately or refrigerate for up to two hours before serving.
