03 - 1/2 cup packed light brown sugar
04 - 1/4 cup granulated sugar
05 - 1/2 teaspoon baking powder
06 - 1/4 teaspoon salt
07 - 3/4 cup unsalted butter, melted

→ Strawberry Filling

08 - 2 cups diced fresh strawberries
09 - 1 tablespoon lemon juice
10 - 2 teaspoons cornstarch
11 - 1/3 cup granulated sugar

# How To Make It:

01 - Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper and lightly grease the surface.
02 - In a large bowl, combine rolled oats, all-purpose flour, light brown sugar, granulated sugar, baking powder, and salt. Add melted butter and mix until crumbly.
03 - Reserve 1 cup of oat mixture for topping. Firmly press the remaining mixture evenly into the prepared pan to form the crust.
04 - In a separate bowl, mix diced strawberries, lemon juice, cornstarch, and granulated sugar until the fruit is well coated.
05 - Evenly spread the strawberry filling over the pressed crust in the pan.
06 - Sprinkle the reserved oat mixture evenly over the strawberry layer.
07 - Bake in the center of the oven for 35 to 38 minutes, or until the topping is golden and the filling is bubbling.
08 - Let cool completely in the pan. Lift out using parchment and cut into bars.

# Expert Tips:

01 -
  • You get both a gooey fruit filling and a crispy, oaty crust in every bite—it’s like a pie and a crisp had the easiest baby.
  • It’s forgiving with whatever berries you have around and comes together with pantry basics.
02 -
  • If you try to cut the bars before they’re fully cool, they’ll fall apart in your hands—learned that with my first batch.
  • Mixing the cornstarch with the lemon juice before adding to berries makes the filling set better.
03 -
  • Browning the butter before adding it to the oat mixture adds a nutty note that’s incredible.
  • Brushing leftover crumbs over the last few bars keeps the topping crisp even after a day or two.
