# How To Make It:

01 - Preheat the oven to 425°F.
02 - Toss fries with olive oil, paprika, garlic powder, salt, and black pepper. Spread on a baking sheet in a single layer.
03 - Bake for 25–30 minutes, flipping halfway, until golden and crispy.
04 - Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned (about 5–6 minutes). Drain excess fat if needed.
05 - Add chopped onion and garlic; sauté for 2–3 minutes until softened.
06 - Stir in taco seasoning and water. Simmer 2–3 minutes until thickened. Season to taste with salt and pepper.
07 - Transfer fries to an ovenproof platter or skillet. Evenly sprinkle shredded cheeses over the fries and spoon the beef mixture on top. Drizzle with nacho cheese sauce if using.
08 - Return to the oven for 5 minutes, or until cheese is melted and bubbly.
09 - Remove from oven and top with tomatoes, black olives, jalapeños, avocado (if using), green onions, cilantro, and dollops of sour cream.
10 - Serve immediately while hot.

# Expert Tips:

01 -
  • You get all the satisfaction of crispy fries with the bold flavors of nachos, creating something even better than both
  • The beef mixture comes together faster than you can preheat the oven, making this totally doable even on busy weeknights
02 -
  • If you pile the toppings on too early, the fries will get soggy, so have everything prepped and ready to go before you start the final assembly
  • Work quickly once the fries come out of the oven the second time, that window of perfect meltiness is precious and short
03 -
  • Double the beef mixture and freeze half for an even faster version next time
  • Sprinkle a little extra cheese on top during the last 2 minutes for that gorgeous golden crust
