# How To Make It:

01 - Combine flour and salt in a large bowl. Create a well in the center and add eggs, water, and olive oil. Stir until combined, then knead dough on a floured surface for 5 to 7 minutes until smooth. Wrap in plastic and rest for 20 minutes. Roll dough to 1/8-inch thickness and cut into 1/4-inch wide strips. Set aside on a floured surface to dry slightly.
02 - Heat olive oil in a large pot over medium heat. Add diced onion, sliced carrots, and celery, cooking for 5 minutes until softened. Add minced garlic and cook for 1 minute more.
03 - Pour in chicken stock and add bay leaves, dried thyme, salt, and black pepper. Stir well. Add chicken pieces, bring to a boil, then reduce heat to low. Cover and simmer for 35 minutes until chicken is cooked through.
04 - Transfer chicken to a plate and discard bay leaves from broth. Shred chicken into bite-sized pieces, discarding bones.
