03 - In a separate bowl, beat cream cheese, butter, powdered sugar, and vanilla extract together until smooth and creamy, approximately 2-3 minutes.
04 - Mix the frosting with the cake crumbs until fully combined. The mixture should hold together when pressed, similar to cookie dough consistency.
05 - Scoop tablespoons of the mixture and roll into 24 uniform balls. Place on a parchment-lined baking sheet and freeze for 20 minutes to firm up.
06 - Melt the white chocolate or candy melts according to package instructions. Dip each cake ball into the melted coating, ensuring complete coverage, then return to the tray.
07 - While the white coating is still soft, pipe or dip a small circle of blue or green candy melt onto the center of each ball to form the iris.
08 - Once the coating has set, add a small dot of dark chocolate or black candy melt in the center of each colored iris to create the pupil.
09 - Using red gel food coloring or decorating gel, draw thin, radiating lines around each eyeball to create spooky blood vessels.
10 - Allow all decorations to set completely at room temperature or refrigerate for faster setting. Serve chilled for best texture.
